Easy Tomato Salad

This simple, insanely delicious salad is a total crowd-pleaser and one of my favourite dinner party dishes.

What makes a salad go from boring to amazing?

One simple little element: acidity.

This salad is packed with layers of complex acidity, making it super satisfying and utterly delicious. Take your time perfecting the dressing, and it’ll knock every other side salad out of the park.

Serve it with bread and mop up all that goodness at the bottom of the bowl.

This simple, insanely delicious salad is a total crowd-pleaser and one of my favourite dinner party dishes.

Ingredients

For the Salad
  • 1 punnet baby heirloom tomatoes (300g)
  • 1 punnet cherry tomatoes (250g)
  • Half a red onion
  • 1 ball buffalo mozzarella
  • Micro celery or micro parsley
  • Nigella seeds
For the Dressing
  • 1/4 cup fresh lemon juice
  • 1/2 cup good quality extra virgin olive oil
  • 2 tablespoons champagne vinegar, or white wine vinegar
  • Sugar
  • Salt + pepper

Instructions

  1. Wash the tomatoes and then pat them dry. Halve the tomatoes and set aside.
  2. Slice the red onion as thinly as you can. Mix it through the tomatoes.
  3. Make the dressing by adding the ingredients to a large jar. Shake the jar enthusiastically until the dressing is pale yellow and almost creamy.
  4. Just before serving, toss the tomato and onion in a little dressing. Taste and adjust with extra salt as needed.
  5. Add the tomato mix to a large serving bowl. Tear the mozzarella into small pieces and and place over the tomatoes. Sprinkle a little salt and pepper on top of each mozzarella piece, as well as an extra drizzle of the dressing.
  6. Finish with microherbs, nigella seeds and a final drizzle of the dressing.
