A delish breakfast with that’s super easy to make! Prep it ahead of time for a week of breakfast pots.

Ingredients

For the Vanilla Chia Pudding
  • 1/3 cup chia seeds
  • 1 cup plant-based milk
  • 1 tsp vanilla paste
For the Choc Banana Mix
  • 2 small bananas
  • 1 heaped tbsp raw cacao powder
  • 1 tbsp maple syrup or honey
  • 1 teaspoon cinnamon
To Serve
  • Granola
  • Coconut yogurt
  • Fresh fruit

Instructions

  1. The day before, make the chia pudding. Add the chia seeds, plant-based milk and vanilla paste to a container or jar with a lid. Shake to combine, then refrigerate.
  2. After 5 minutes, shake the jar well and then return it to the fridge.
  3. Repeat twice more at ten minute intervals. This helps the chia seeds to soak evenly and prevents clumps from forming.
  4. Leave the pudding in the fridge to soak overnight.
  5. When ready to serve, mash the bananas in a medium-sized bowl. Add the cacao powder, maple syrup and cinnamon. Use the fork to stir the mixture until combine.
  6. Take the chia pudding out of the fridge and stir with a spoon to break up any clumps of seeds.
  7. Add the chia to the banana mix and stir until well combined.
  8. Serve with coconut yogurt, granola and fresh berries.
  9. Once made, the choc banana chia pudding will keep in the fridge for 2-3 days.
