A delish breakfast with that’s super easy to make! Prep it ahead of time for a week of breakfast pots.
Ingredients
For the Vanilla Chia Pudding
- 1/3 cup chia seeds
- 1 cup plant-based milk
- 1 tsp vanilla paste
For the Choc Banana Mix
- 2 small bananas
- 1 heaped tbsp raw cacao powder
- 1 tbsp maple syrup or honey
- 1 teaspoon cinnamon
To Serve
- Granola
- Coconut yogurt
- Fresh fruit
Instructions
- The day before, make the chia pudding. Add the chia seeds, plant-based milk and vanilla paste to a container or jar with a lid. Shake to combine, then refrigerate.
- After 5 minutes, shake the jar well and then return it to the fridge.
- Repeat twice more at ten minute intervals. This helps the chia seeds to soak evenly and prevents clumps from forming.
- Leave the pudding in the fridge to soak overnight.
- When ready to serve, mash the bananas in a medium-sized bowl. Add the cacao powder, maple syrup and cinnamon. Use the fork to stir the mixture until combine.
- Take the chia pudding out of the fridge and stir with a spoon to break up any clumps of seeds.
- Add the chia to the banana mix and stir until well combined.
- Serve with coconut yogurt, granola and fresh berries.
- Once made, the choc banana chia pudding will keep in the fridge for 2-3 days.
